Not sure exactly what singletrack robdamanii is talking palt. I've never heard of any [legal] singletrack in NP. There are some ATV trails branching off the rail trail all on private property. There's actually one loop of singletrack called Larsen Loop that's not too bad, but it ventures into barbed wire area.
If you venture up the mountain you'll wanna drive there's Mohonk Preserve and Minnewaska state park. It's all carriageways and whatnot, but it's a nice ride, especially the Castlepoint carriageway couple miles of uphill, but it's so worth the downhill sections that follow it.
